When hubby is away I don't like making big meals, but I do like to eat well. Tonight I invented a roasted vegetable dish. Fingerling potatoes, zucchini, onion, minced garlic, lemon juice, salt and pepper, and some oil.
Mix them all together in a baking dish and cook for 30min.
Paired with some steamed broccoli and cauliflower made the perfect dinner for one.
